Chips and salsa is back on the menu with this great Interstitial Cystitis Friendly salsa recipe. You can easily create a number of IC Friendly Salsa variations by changing just a few ingredients (add black beans, use Mango instead of Pineapple etc.)
Ingredients
4 ears of organic sweet corn (always use organic corn for conventional is GMO)
1/2 red onion, diced (substitute shallots if raw onions bother your bladder)
2 firm avocados, diced
optional: 1/2 fresh very ripe pineapple, diced (never canned for it is too acidic, you can also substitute Mango)
1/2 yellow, orange or red Bell pepper, seeded and finely diced
1/2 Anaheim or Banana pepper, seeded and finely diced (next to the lowest on Scoville Unit; nearing a Bell pepper)
2 Tbs fresh pineapple juice
1/4 cup of chopped cilantro
Celtic Salt to taste
Fresh ground black pepper
Preparation
- Dice onions (or shallots) and place in bowl
- Use your knife to slice kernels off the corn husk (see illustration) and add to bowl with onions
- Add all remaining ingredients and mix together in bowl.
- Cover and refrigerate for one hour to allow flavors to mingle.
