Keys To Success Use a bread maker to make the dough. If you have problems with cinnamon, try Ceylon Cinnamon. We find it to be more bladder friendly.

These cinnamon rolls are not hard to make, but they do take a long time, so make them for someone you love. Makes 1 dozen rolls.


  • 3/4 cup + 2 tbsp Milk
  • 1 Egg
  • 3 cups of flour
  • 3 tbsp sugar
  • 1/2 cup Muscovado sugar (you can also use brown sugar)
  • Ceylon Cinnamon
  • 1/2 tsp salt
  • 8 tbsp organic butter (we like to use goat butter)
  • 1.5 tsp fast rise yeast
  • optional: raisins and nuts


  • In the order listed, combine the following ingredients in a breadmaker (follow order)
  • 3/4 cup + 2 tbsp    Milk
  • 1 egg
  • 3 cups of flour
  • 3 tbsp sugar
  • 1/2 tsp salt
  • 4 tbsp butter, cut into 8 pieces (place around edge)
  • 1.5 tsp fast rise yeast (put in center)
  • Set your bread maker to Kneed + Rise and let it do it's thing (~1hr 40 mins)
  • Once your bread maker finishes, take the dough out and place it on the counter.  Kneed it by hand a couple of times, then let is rest on the counter in a loose shaped ball for about 15 minutes
  • After 15 minutes, roll out the dough into a 15 X 10 inch rectangle (use a measuring tape) and then spread about 4 tablespoons of softened butter (about 4 tbsp, leave small border around edge)
  • Combine 1/2 cup brown suger (dark muscovado) with 2 tbsp ceylon cinnamon and spread even over the dough.  You can also add pecans, raisins and/or dates etc.  Go over with rolling pin to ensure its compacted so it doesn't fall out when you roll it up.
  • Start from the long end and roll the dough into a spiral.  Make sure to really tuck in the first roll.  Roll and tuck, roll and tuck.  When you get to the end, pinch the seem closed. Tuck and pinch the ends too. You should now have a "log" of dough.
  • Cut the log of dough in half, then cut each half into halves leaving you with 4 quarters. Finally, cut each qtr into 3 pieces giving you a total of 12 pieces.
  • Place the cinnamon buns in a 9X13 greased pan and space evenly into 4 rows of 3. Cover with a cloth and put in a warm draft free place for about 45 minutes so they can rise (a cold oven with the light on works perfectly).
  • After 45 minutes, Preheat the oven to 375 and bake for 16 - 25 mins (or until golden brown).
  • Take out of the oven and immediately apply the cream cheese icing so it melts down into the cracks and crevices.  Allow to cool and then dig in!

Cream Cheese Icing

Combine the following ingredients in a mixing bowl and blend until smooth.

1 cup powdered sugar
2 tbsp coconut milk
1 stick of organic cream cheese
1/2 tsp vanilla
mix together and spread on warm cinnamon buns

My wife has Interstitial Cystitis and I make these Cinnamon Rolls for her every year for her birthday. And each year, she asks me to make these for the holiday's and our anniversary. There's nothing like a home made Cinnamon Roll made from scratch. These really aren't hard to make, just time consuming because you have to stop a few times to let the dough rise.
